Calico roast pork/ham/chicken  
 
 
Ingredients:
  • Calico Jack Sauce
  • Pre prepared baked pork /ham/ chicken
  • 2-3 cork full Calico Jack Rum Punch
  • 1 table spoon sugar
  • Crushed Ginger
  • Crushed Basil,
  • Tomato ketchup/tomato sauce & jerk season (optional)
 
Preparation:

Combine ingredients in a medium-size nonstick saucepan over medium heat. Stir to dissolve the sugar and bring to boil for approx. 2mins.
Glaze pork /ham/ chicken and place in oven for 3-5minutes.

 
 
Calico Jack Cupcake  
 
 
 
Ingredients:
  • 1 3/4 cup cake flour
  • 1 cup sugar
  • 1/2 teaspoons salt
  • 2 1/2 teaspoons baking powder
  • 2 large eggs, separated and whites beaten until stiff
  • 1 teaspoon vanilla extract
  • 1/2 cup Calico Jack Rum Punch
  • 1 stick of butter, softened
 
 
Spicy Calico Jack Chicken Sauce  
 
 
 
Ingredients:
  • 1 tablespoon grated ginger
  • 2/3 cup fat-free, less-sodium chicken broth
  • 6 tablespoons Calico Jack Rum Punch
  • 1 1/2 tablespoons low-sodium soy sauce
  • 1 1/2 teaspoons fresh lemon juice
  • 3/4 teaspoon hot chili sauce
 
 
Classic Calico Jack Pan Sauce for Fish  
 
 
 
Ingredients:
  • 2 T. flour
  • 2 T. butter (or oil)
  • 1/2 cup Calico Jack Rum Punch
  • 1 cup fish stock
  • Salt
 
 
Calico Jack Barbecue Sauce  
 
 
 
Ingredients:
  • 2 cups ketchup
  • 1/2 cup water
  • 1/3 cup apple cider vinegar
  • 1/3 cup brown sugar
  • 2 tablespoons yellow mustard
  • 1 tablespoon onion powde
  • 1 tablespoon garlic powder
  • 1/2 teaspoon cayenne
